Preparation
- Preheat the oven to 425°F (220°C).
 - Wash and cut the potatoes into bite-sized pieces.
 - In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, oregano, and thyme until evenly coated.
 
Cooking
- Spread the potatoes out in a single layer on a baking sheet.
 - Bake for 25–30 minutes, or until golden and crispy, stirring halfway through.
 - Remove from the oven and sprinkle with Parmesan cheese.
 - Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
 - Garnish with fresh parsley before serving.
 
Notes
For extra crunch, try using a mixture of Russet and Yukon Gold potatoes. Adjust the spices according to your taste, and consider adding red pepper flakes for heat. Don't overcrowd the pan for the best texture.
