  • 4 medium potatoes Any variety you prefer
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese Can be substituted with other cheese if desired
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the potatoes into bite-sized pieces.
  3. In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, oregano, and thyme until evenly coated.
Cooking
  1. Spread the potatoes out in a single layer on a baking sheet.
  2. Bake for 25–30 minutes, or until golden and crispy, stirring halfway through.
  3. Remove from the oven and sprinkle with Parmesan cheese.
  4. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  5. Garnish with fresh parsley before serving.

Notes

For extra crunch, try using a mixture of Russet and Yukon Gold potatoes. Adjust the spices according to your taste, and consider adding red pepper flakes for heat. Don't overcrowd the pan for the best texture.
