Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. In an oven-proof skillet, heat olive oil over medium-high heat. Sear the pork on all sides until browned.
  4. In a bowl, mix the Dijon mustard and heavy cream together.
