- Season the pork tenderloin with salt and pepper.
- In an oven-proof skillet, heat olive oil over medium-high heat. Sear the pork on all sides until browned.
- In a bowl, mix the Dijon mustard and heavy cream together.
- Pour the Dijon cream sauce over the seared pork. If you’re feeling fancy, sprinkle with rosemary and thyme.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Let it rest for 5 minutes before slicing and serving.
