Ingredients
  

Main Ingredients
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 3 cloves garlic, minced
  • 1/2 yellow onion chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt Plus more to taste.
  • to taste fresh ground pepper
  • 14 oz can crushed tomatoes
  • 32 oz chicken broth Add more if needed.
  • 1 cup water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles, broken into small pieces Can substitute with gluten-free pasta.
  • 1 cup frozen spinach
  • 1/4 cup cream Can substitute with coconut milk for a vegan version.
  • to taste ricotta cheese Alternatives: cream cheese or Greek yogurt.
  • 4 oz mozzarella cheese, sliced
  • to taste Parmesan cheese, optional

Method
 

Preparation
  1. In a pot, brown the ground beef and drain off any excess grease.
  2. Add minced garlic, chopped onion, garlic powder, onion powder, dried basil, dried oregano, salt, and pepper. Cook for 5 minutes over medium/low heat until fragrant.
  3. Stir in the crushed tomatoes, chicken broth, water, tomato paste, and broken lasagna pieces.
  4. Bring this delicious mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 10 minutes.
  5. After simmering, add in the frozen spinach and cream, and simmer for an additional 5 minutes.
  6. Place a slice of mozzarella cheese at the bottom of your bowl, ladle in the soup, then top with a dollop of ricotta cheese and sprinkle some Parmesan for extra flavor.

Notes

Serve in deep bowls for a delightful presentation. Pair with crusty garlic bread for added crunch.
