One Pot Healthy Broccoli Mac and Cheese

Ingredients
  

Main Ingredients
  • 2 cups whole milk
  • 1.5 cups water or broth Broth is preferred for more flavor.
  • 8 oz pasta of choice
  • 8-10 oz broccoli, finely chopped You can use fresh or frozen broccoli.
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup plain Greek-style yogurt
  • 1 tbsp butter or ghee Optional ingredient.

Method
 

Preparation
  1. Bring the whole milk and water/broth to a boil in a large pot.
  2. Add your pasta and reduce to a simmer for 10 minutes.
  3. Stir in your broccoli and continue to cook for another 2-3 minutes until the pasta and broccoli reach your desired tenderness.
  4. Remove from heat and stir in the cheese, yogurt, and butter/ghee until the cheese melts beautifully.
  5. Serve and enjoy!

Notes

For best results, add cheese gradually to ensure a smooth melt. Serve with extra cheese or crunchy breadcrumbs on top.
