- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown them on all sides. Don’t rush this step; let those flavors lock in!
- Stir in the onions and garlic, cooking until softened and fragrant.
- Add the carrots, potatoes, and mushrooms to the pot.
- Mix in tomato paste, thyme, rosemary, salt, and pepper.
- Pour in the beef broth and bring it to a boil.
- Reduce heat, cover, and let it simmer for 1.5 to 2 hours until the beef is tender.
- Adjust seasoning if necessary and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3–4 days. You can freeze it for up to 3 months.
