  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
Seasoning and Fats
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil For browning the beef

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown them on all sides. Don’t rush this step; let those flavors lock in!
  3. Stir in the onions and garlic, cooking until softened and fragrant.
  4. Add the carrots, potatoes, and mushrooms to the pot.
  5. Mix in tomato paste, thyme, rosemary, salt, and pepper.
  6. Pour in the beef broth and bring it to a boil.
  7. Reduce heat, cover, and let it simmer for 1.5 to 2 hours until the beef is tender.
  8. Adjust seasoning if necessary and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3–4 days. You can freeze it for up to 3 months.
