Main ingredients
  • 1 lb boneless, skinless chicken thighs or breasts You can swap with turkey or plant-based chicken.
  • 1 cup long-grain rice No need to cook separately.
  • 2 cups chicken broth Can substitute with vegetable broth for a vegan option.
  • ½ cup BBQ sauce Try mustard BBQ sauce for a tangy twist.
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • to taste Salt and pepper Don't skip on seasoning!

Method
 

Cooking
  1. In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
  2. Whisk together the BBQ sauce and honey in a small bowl; pour over the chicken.
  3. Add the rice and chicken broth; stir to combine.
  4. Bring to a simmer; cover and cook on low for about 20 minutes until the rice is tender.
  5. During the last 5 minutes of cooking, add the mixed vegetables on top to steam.
  6. Let sit for 5 minutes before fluffing the rice with a fork and serving.

Notes

Letting the dish sit before fluffing the rice allows flavors to meld. Serve with fresh parsley or a side of crunchy coleslaw for added texture.
