Mini Apple Pies

Ingredients
  

Pie Crust and Filling
  • 1 package pre-made pie crusts You can use store-bought for convenience
  • 3 cups peeled and diced apples Granny Smith or Honeycrisp work well
  • 1/2 cup sugar Adjust based on apple sweetness
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice Brightens flavor
  • 1 tablespoon butter To be placed on top of the filling
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crusts and cut circles to fit your muffin tin.
  3. In a bowl, mix the apples, sugar, cinnamon, nutmeg, lemon juice, and salt until the apples are well coated.
Assembly
  1. Place the dough circles into the muffin tin and fill each crust with the apple mixture, leaving room for bubbling.
  2. Add a dab of butter on top of the filling in each pie.
Baking
  1. Bake for about 20-25 minutes or until they turn golden brown.
  2. Let them cool a bit before you dig in.

Notes

Serve warm, ideally with a scoop of vanilla ice cream or a drizzle of caramel. These mini pies keep well in the fridge for about 3-4 days in an airtight container.
