Ingredients
  

For the Pie Crust
  • 2 crusts pie crusts (store-bought or homemade)
For the Apple Filling
  • 3 medium apples, peeled and diced
  • ¾ cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg for egg wash

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crusts and cut into small circles using a biscuit cutter or a glass.
  3. In a bowl, toss the diced apples, sugar, cinnamon, and lemon juice until well combined.
  4. Place a small spoonful of the apple mixture in the center of each circle.
  5. Fold the circles over to create a half-moon shape, sealing the edges with a fork.
  6. Brush the tops with the beaten egg for that lovely golden finish.
Baking
  1. Bake for 20-25 minutes until they are golden brown and your kitchen smells like heaven!

Notes

Serve these mini pies warm with a scoop of vanilla ice cream on top and drizzle with caramel sauce. They last about 3-5 days in the fridge; freeze for up to 3 months.
