Casserole ingredients
  • 4.5 cups chopped cooked chicken
  • 4 oz cream cheese (room temperature) Softened for easier mixing
  • 1 cup cottage cheese
  • 0.5 cup sour cream Use low-fat version if desired
  • 1 can Unsalted Cream of Chicken Soup (10.5 oz) Can substitute with cream of mushroom soup
  • 0.25 tsp garlic powder
  • 0.25 tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed) For the topping
  • 5 Tbsp butter (melted) Combine with crushed crackers

Method
 

Preparation
  1. Preheat the oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
  2. In a large bowl, combine the chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix until well combined.
  3. Spread the mixture into the prepared pan, smoothing it out evenly.
  4. In another bowl, combine the crushed crackers and melted butter. Sprinkle the buttery cracker mixture over the chicken mixture.
Cooking
  1. Bake uncovered for 30 to 40 minutes, or until bubbly and golden.

Notes

For added crunch, you can toss some chopped nuts on top along with the cracker crumbs. Feel free to mix in some shredded cheese for an extra cheesy delight. This casserole can be made ahead of time by preparing the mixture the night before.
