Ingredients
  

Main Ingredients
  • 1 cup cooked lentils You can use leftover lentils.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled Can substitute with goat cheese or omitted for vegan.
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with feta cheese and serve immediately or refrigerate for later.

Notes

The salad keeps well in the fridge for about 3-5 days. It tastes even better the next day as the flavors meld together.
