  • 1.5 lbs Chicken breasts, boneless & skinless (Cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (Divided for cooking)
  • to taste Salt & black pepper
  • 2 medium Zucchini (Sliced into half-moons)
  • 2 Red bell peppers (Diced into chunks)
  • 1 large Red onion (Sliced into strips)
  • 2 cups Cherry tomatoes (Halved)
  • 1 cup Kalamata olives (Pitted and halved)
  • 4 cloves Garlic (Minced)
  • 1/4 cup Sun-dried tomatoes (Chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (Juice only)
  • 0.5 cup Feta cheese (Crumbled) Optional topping
  • 2 tbsp Fresh parsley (Optional garnish)

Method
 

Preparation
  1. Prep your ingredients and chop everything before cooking. Trust me, it saves time!
  2. Sear chicken in 1 tablespoon of olive oil until golden and cooked through.
  3. Sauté onions, garlic, and all the vegetables in the remaining oil until they get soft and fragrant.
  4. Combine the chicken and sautéed veggies, season with spices, and toss everything together.
  5. Finally, add lemon juice, olives, and feta cheese, then serve it hot!

Notes

Chop your veggies evenly for even cooking. For extra flavor, marinate the chicken in lemon juice and herbs for an hour before cooking. You can substitute chicken with shrimp or tofu. Add spinach or kale for more greens. Experiment with spices to add a kick.
