Method
Marinate the chicken
- In a bowl, mix together olive oil, oregano, garlic powder, salt, and pepper.
- Add chicken thighs and let them soak up those flavors for at least 30 minutes.
Cook the chicken
- Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes per side until it’s golden brown and reaches an internal temperature of 165°F (75°C).
Make the tzatziki sauce
- While the chicken is cooking, mix Greek yogurt, feta, lemon juice, minced garlic, salt, and pepper until smooth.
Assemble your gyros
- Once the chicken is done, slice it into strips.
- Spread the tzatziki on the pita, pile on the chicken, and top with cherry tomatoes, cucumber, and red onion.
- Roll it up and enjoy!
Notes
Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently when ready to enjoy.
