Ingredients
  

For the chicken
  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For the gyros
  • 4 pieces pita breads
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium red onion, thinly sliced
For the tzatziki sauce
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • to taste Salt and pepper
For garnish
  • to taste Fresh parsley

Method
 

Marinate the chicken
  1. In a bowl, mix together olive oil, oregano, garlic powder, salt, and pepper.
  2. Add chicken thighs and let them soak up those flavors for at least 30 minutes.
Cook the chicken
  1. Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes per side until it’s golden brown and reaches an internal temperature of 165°F (75°C).
Make the tzatziki sauce
  1. While the chicken is cooking, mix Greek yogurt, feta, lemon juice, minced garlic, salt, and pepper until smooth.
Assemble your gyros
  1. Once the chicken is done, slice it into strips.
  2. Spread the tzatziki on the pita, pile on the chicken, and top with cherry tomatoes, cucumber, and red onion.
  3. Roll it up and enjoy!

Notes

Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently when ready to enjoy.
