Ingredients
  

For the Meatloaf
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1/2 cup breadcrumbs Helps bind the meatloaf.
  • 1/4 cup diced onion Adds flavor to the meat mixture.
  • 1 egg Binds the meatloaf together.
  • 1/4 cup milk Keeps the meatloaf moist.
  • 1 tbsp Worcestershire sauce Adds depth of flavor.
  • 1 tsp salt
  • 1/2 tsp pepper
For the Mashed Potatoes
  • 2 cups mashed potatoes Prepared according to recipe or package instructions.
  • 1 cup shredded cheese Cheddar or any cheese of your choice.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, onion, egg, milk, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
Baking
  1. Bake for 45-60 minutes or until the internal temperature reaches 160°F (70°C).
  2. While the meatloaf bakes, prepare the mashed potatoes.
  3. Once the meatloaf is done, remove it from the oven and top with shredded cheese.
  4. Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
Serving
  1. Serve slices of meatloaf alongside the mashed potatoes, optionally drizzled with gravy and garnished with fresh parsley.

Notes

Don’t rush the mashing process for creamy texture. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days or frozen for up to 3 months. Reheat in the oven or microwave.
