Dressing
  • 1/2 cup olive oil
  • 3 Tbsp white vinegar (or rice vinegar or lemon juice) for a zing
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/2 tsp sea salt
Salad Ingredients
  • 14 to 16 ounces romaine leaf lettuce (chopped)
  • 1 cup kalamata olives (sliced)
  • 1 cup pepperoncinis
  • 2 cups cherry tomatoes (halved)
  • 2 cups salami (cut into strips)
  • 1/2 cup red onion (thinly sliced)
  • 6 ounces grated Parmesan cheese about 1/2 to 1 cup, to taste

Method
 

Preparation
  1. Mix the dressing: Combine olive oil, vinegar, garlic powder, onion powder, dried parsley, dried oregano, black pepper, and salt in a small bowl. Stir well and set aside.
  2. Chop your veggies: Dice the romaine lettuce, halve the tomatoes, and slice the onions thinly.
  3. Combine: Toss all salad ingredients into a large bowl.
  4. Dress the salad: Drizzle the dressing over the salad and toss lightly. Store any extra dressing separately.
  5. Adjust for taste: Add more Parmesan cheese and/or dressing if desired.
  6. Serve and enjoy: Pair with your main dish and dig in!

Notes

Store the salad in the fridge for about 3 days, keeping leftover dressing separate. Refresh with a quick toss before serving. To add variety, consider spice, alternative greens, or additional protein sources.
