  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Divided
  • 1 cup shredded mozzarella cheese For topping
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced Toast for more flavor
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In one dish, mix breadcrumbs, half the Parmesan, and seasonings.
  3. In another bowl, beat together the eggs and milk.
  4. Put flour in a third dish.
Cooking
  1. Dredge the chicken in flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
  2. Cook the chicken in olive oil for 3-4 minutes per side until golden brown.
  3. Transfer the chicken to a baking dish.
  4. Mix the remaining Parmesan with mozzarella and garlic, then spread it on top of the chicken.
  5. Bake for 20-25 minutes until the chicken is fully cooked through.

Notes

Store leftovers in an airtight container: keeps fresh for 3-4 days in the fridge or up to 3 months in the freezer. Reheat in the oven for best texture.
