Preparation
- Preheat your oven to 375°F.
- In one dish, mix breadcrumbs, half the Parmesan, and seasonings.
- In another bowl, beat together the eggs and milk.
- Put flour in a third dish.
Cooking
- Dredge the chicken in flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
- Cook the chicken in olive oil for 3-4 minutes per side until golden brown.
- Transfer the chicken to a baking dish.
- Mix the remaining Parmesan with mozzarella and garlic, then spread it on top of the chicken.
- Bake for 20-25 minutes until the chicken is fully cooked through.
Notes
Store leftovers in an airtight container: keeps fresh for 3-4 days in the fridge or up to 3 months in the freezer. Reheat in the oven for best texture.
