Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bread crumbs Toast for extra crunch if desired
  • 1 cup grated Parmesan cheese Split into two parts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour Can substitute with whole wheat flour
  • 2 large eggs
  • 1/4 cup milk Can use almond milk for a lighter version
  • 2 cloves garlic, minced Toasted for enhanced flavor
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix bread crumbs, half of the Parmesan cheese, and the seasonings.
  3. In another dish, beat the eggs and milk together.
  4. In a third dish, place the flour.
  5. Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally coat it with the breadcrumb mixture.
Cooking
  1. Warm the olive oil in a skillet over medium heat and cook the chicken for about 3-4 minutes on each side until golden brown.
  2. Transfer the cooked chicken to a baking dish.
  3. Mix the remaining Parmesan with mozzarella and garlic and top the chicken.
  4. Bake for 20-25 minutes or until the chicken is fully cooked.

Notes

Store any leftovers in an airtight container in the fridge for up to 3-4 days. Freeze for up to a month and reheat in the oven for best results.
