  • 4 pieces boneless skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Divided into two portions
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced Pro tip: Toast for more flavor
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix together breadcrumbs, half of the Parmesan cheese, and Italian seasoning.
  3. In another bowl, beat together eggs and milk.
  4. Pour flour into a third dish for dredging.
  5. Dredge each chicken breast first in the flour, dip into the egg mixture, and finally coat with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a pan over medium heat and cook the chicken for 3-4 minutes per side until golden brown.
  2. Transfer the chicken to a baking dish.
  3. Mix remaining Parmesan with mozzarella and garlic, then top each chicken breast with the mixture.
  4. Bake in the oven for 20-25 minutes until the chicken is fully cooked.

Notes

Serve with a garden salad or roasted veggies. Drizzle with balsamic glaze for a gourmet touch. To keep leftovers crispy, reheat in the oven.
