Ingredients
  

For the Chicken
  • 4 pieces boneless skinless chicken breasts Flatten for quicker cooking if desired.
  • 1 cup bread crumbs Panko for extra crispiness.
  • 1 cup grated Parmesan cheese Divided for topping.
  • 1 cup shredded mozzarella cheese For topping.
  • 1/2 cup all-purpose flour
  • 2 large eggs Beaten.
  • 1/4 cup milk Regular or almond milk for a vegan option.
  • 2 cloves garlic Minced.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil For frying.

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In one dish, mix breadcrumbs with half the Parmesan cheese and seasonings.
  3. In another dish, beat eggs and milk together.
  4. Place the flour in a third dish.
Coating the Chicken
  1. Dredge each chicken breast in flour, dip it in the egg mixture, and coat it in the breadcrumb mixture.
Cooking
  1. Cook the chicken in olive oil over medium heat for 3-4 minutes on each side until golden brown.
  2. Once cooked, transfer the chicken to a baking dish.
  3. In a bowl, combine the remaining Parmesan cheese with mozzarella and garlic.
  4. Top the chicken with the cheese mixture and bake for 20-25 minutes or until cooked through.

Notes

Serve with steamed vegetables, garlic bread, or a fresh salad. Store leftovers in the fridge for 3-4 days or freeze for longer storage. Reheat in the oven for best results.
