Main Ingredients
  • 1 cup quinoa Rinse before cooking.
  • 2 cups vegetable broth or water Broth adds extra flavor.
  • 1 can (15 oz) chickpeas Drained and rinsed.
  • 1 lemon lemon, zested and juiced For flavor.
  • 2 tablespoons olive oil For cooking.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Optional.

Method
 

Preparation
  1. Rinse quinoa under cold water.
  2. In a medium pot, combine quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is cooked.
Mixing
  1. In a large bowl, combine cooked quinoa, chickpeas, lemon zest, lemon juice, olive oil, thyme, and oregano. Mix well.
  2. Season with salt and pepper to taste.
Serving
  1. Serve warm or chilled, garnished with fresh parsley if desired.

Notes

This dish keeps in the fridge for about 3–4 days and can be frozen for up to a month. Reheat in the microwave or stovetop to retain flavor. Toasting the quinoa can enhance its flavor. Experiment with fresh herbs and add red pepper flakes for a spicy kick.
