Mixing
- In a large bowl, combine cooked quinoa, chickpeas, lemon zest, lemon juice, olive oil, thyme, and oregano. Mix well.
- Season with salt and pepper to taste.

Notes
This dish keeps in the fridge for about 3–4 days and can be frozen for up to a month. Reheat in the microwave or stovetop to retain flavor. Toasting the quinoa can enhance its flavor. Experiment with fresh herbs and add red pepper flakes for a spicy kick.
