Ingredients
  

For the brownies
  • 1 cup unsalted butter, melted
  • 2 cups sugar
  • 4 large eggs Beat well after each addition
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 Zest of 1 lemon
  • 1/2 cup lemon juice Use fresh for best flavor
  • 1 teaspoon baking powder
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch pan.
  2. In a large bowl, mix melted butter and sugar until combined.
  3. Add eggs, one at a time, beating well after each addition.
  4. Stir in lemon zest and lemon juice.
  5. In another bowl, whisk together flour, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Let cool completely.
Glazing
  1. For the glaze, whisk together powdered sugar and lemon juice until smooth.
  2. Drizzle over cooled brownies, slice, and serve!

Notes

These Lemonies can be stored in an airtight container in the fridge for up to a week, or frozen for about 3 months. For freezing, let thaw in the fridge overnight and warm in the microwave if desired.
