Ingredients
  

For the Marinade
  • 1/4 cup lime juice Freshly squeezed for best flavor
  • 1/4 cup orange juice Freshly squeezed for best flavor
  • 1/4 cup pineapple juice Fresh or canned
  • 2 tablespoons olive oil Extra virgin recommended
  • 2 cloves garlic, minced For added flavor
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika For a touch of warmth
For the Chicken
  • 4 pieces boneless, skinless chicken breasts Flat and uniform for even cooking
  • 1 bunch fresh cilantro For garnish

Method
 

Marinade Preparation
  1. In a bowl, whisk together lime juice, orange juice, pineapple juice, olive oil, minced garlic, salt, black pepper, and paprika to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour or up to overnight.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Remove from the grill and let it rest for a few minutes before serving.
  5. Serve garnished with fresh cilantro.

Notes

Marinate overnight for maximum flavor. Feel free to swap citrus juices for a unique twist. Adjust heat with cayenne pepper for extra spice. For a vegan option, use marinated tofu or tempeh.
