  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 pieces low-carb tortillas

  1. Gather and prep your ingredients: slice the beef into thin strips and chop the bell peppers and onion.
Cooking
  1. Heat olive oil in a skillet over medium heat; sauté the onions and bell peppers until softened, about 5-7 minutes.
  2. Increase heat to medium-high, add sliced beef, season with salt and pepper, and cook until browned, about 3-5 minutes.
  3. Reduce heat to low; place provolone slices over the beef mixture and let them melt completely.
  4. Spoon the beef-cheese mixture onto each tortilla and roll tightly.
  5. Return roll-ups seam-side down to the skillet; cook until golden brown on all sides, about 3-4 minutes total.

Notes

These roll-ups can be stored in the fridge for 3-4 days, or frozen for up to 3 months. For reheating, a quick zap in the microwave works, but for that golden crunch, pop them back in a skillet for a few minutes. Slicing the beef thinly is key for tenderness.
