Ingredients
  

Base Ingredients
  • 8 large eggs 8 large eggs
  • ¼ cup ¼ cup milk Dairy milk preferred for creaminess
  • ½ - 1 tsp ½ – 1 tsp salt Adjust to taste
  • ½ tsp ½ tsp black pepper Freshly ground recommended
Vegetables
  • ¼ cup ¼ cup white onion (finely diced)
  • cup ⅔ cup baby spinach (roughly chopped) You can use other leafy greens
  • ½ - ⅔ cups ½ – ⅔ cups white or baby bella mushrooms (diced)
  • ½ cup ½ cup bell pepper (any color, deseeded and chopped into small pieces)
  • ¼ cup ¼ cup chopped green onions
Protein
  • 4 strips 4 strips bacon (cooked and crumbled)
  • 2 links 2 links cooked chicken sausage (chopped into tiny pieces) Turkey sausage can be used as a substitute
  • 1 cup 1 cup cooked or rotisserie chicken (chopped into small pieces)
Seasonings
  • ½ tsp ½ tsp garlic powder
  • ½ tsp ½ tsp onion powder
  • ¼ cup ¼ cup buffalo sauce For added flavor and spice
  • ¼ - ⅓ cup ¼ - ⅓ cup shredded cheddar or mozzarella cheese Use your preferred cheese

Method
 

Preparation
  1. Preheat your oven to 350°F and grease a regular muffin tin (12 wells) with avocado oil or cooking spray.
  2. Whisk together the eggs, milk, salt, and pepper in a large mixing bowl.
  3. Choose your flavor variation from the ingredients list and stir in the extras.
Baking
  1. Divide the egg mixture evenly among the greased muffin cups. Sprinkle extra cheese on top if you like it extra cheesy!
  2. Bake for 14 – 18 minutes until puffed and set.
  3. Let cool slightly before serving.

Notes

These egg bites can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months. For best results microwave until heated through.
