Preparation
- Preheat your oven to 300°F (150°C).
- In a large skillet, heat olive oil over medium-high heat. Season the roast with salt and pepper, then sear it in the skillet until browned on all sides.
Cooking
- Place the sliced onions in the bottom of a roasting pan and place the seared roast on top.
- In a bowl, combine beef broth and French onion soup mix, then pour over the roast and onions.
- Cover the pan with a lid or aluminum foil and roast in the preheated oven for 3-4 hours, or until the roast is tender.
- Remove from the oven and let it rest for a few minutes before slicing.
- Serve garnished with fresh thyme if desired.
Notes
For the best flavor, don't rush the searing. You can swap fresh onions with caramelized onions for a deeper flavor or add a splash of Worcestershire sauce if you prefer a kick.
