  • 3-4 pounds chuck roast Cut of beef for roasting.
  • 2 large onions, sliced Standard yellow onions work best.
  • 2 cups beef broth Use low-sodium if preferred.
  • 1 packet French onion soup mix For flavor.
  • 2 tablespoons olive oil For searing the roast.
  • Salt and pepper to taste For seasoning.
  • Fresh thyme for garnish (optional) Adds a fresh touch.

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season the roast with salt and pepper, then sear it in the skillet until browned on all sides.
Cooking
  1. Place the sliced onions in the bottom of a roasting pan and place the seared roast on top.
  2. In a bowl, combine beef broth and French onion soup mix, then pour over the roast and onions.
  3. Cover the pan with a lid or aluminum foil and roast in the preheated oven for 3-4 hours, or until the roast is tender.
  4. Remove from the oven and let it rest for a few minutes before slicing.
  5. Serve garnished with fresh thyme if desired.

Notes

For the best flavor, don't rush the searing. You can swap fresh onions with caramelized onions for a deeper flavor or add a splash of Worcestershire sauce if you prefer a kick.
