Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the Italian sausage over medium heat until it’s browned.
- Add the sliced bell peppers, onion, and garlic to the skillet. Sauté until the veggies are tender.
- Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Mix it well!
- Transfer the mixture to a casserole dish and top with the shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
This casserole can be stored in the fridge for up to 3-4 days or frozen for up to 2 months. Reheat from frozen or after thawing for easy dinners. Variations include using chickpeas for a vegan option.
