  • 1 pound Italian sausage
  • 2 pieces bell peppers (red and green), sliced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the Italian sausage over medium heat until it’s browned.
  3. Add the sliced bell peppers, onion, and garlic to the skillet. Sauté until the veggies are tender.
  4. Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Mix it well!
  5. Transfer the mixture to a casserole dish and top with the shredded mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

This casserole can be stored in the fridge for up to 3-4 days or frozen for up to 2 months. Reheat from frozen or after thawing for easy dinners. Variations include using chickpeas for a vegan option.
