  • 4 pieces chicken thighs
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • to taste salt and pepper
  • for garnishing fresh cilantro

Method
 

Preparation
  1. In a bowl, mix together the coconut milk, soy sauce, brown sugar, garlic, ginger, turmeric, coriander, salt, and pepper.
  2. Marinate the chicken thighs in this mixture for at least 1 hour, or better yet, overnight.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken in a roasting pan and pour the marinade over the top.
Cooking
  1. Roast in the oven for 35-40 minutes or until the chicken is cooked through and golden.
  2. Garnish with fresh cilantro before serving.

Notes

For best results, marinate overnight for deeper flavors. Timing is crucial when using chicken breasts, as they cook faster than thighs. For a vegan option, substitute chicken with tofu. A squeeze of lime just before serving adds a fresh twist.
