Preparation
- Preheat your oven to 375°F (190°C).
- Carefully slice a pocket into each chicken breast.
- Stuff each pocket with a slice of brie cheese and a spoonful of cranberry sauce.
- Season the outside of the chicken breasts with salt and pepper.
Cooking
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until fully cooked.
Serving
- Garnish with fresh thyme or parsley before serving.
Notes
