  • 4 pieces chicken breasts
  • 8 ounces brie cheese
  • 1/2 cup cranberry sauce
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Fresh thyme or parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice a pocket into each chicken breast.
  3. Stuff each pocket with a slice of brie cheese and a spoonful of cranberry sauce.
  4. Season the outside of the chicken breasts with salt and pepper.
Cooking
  1. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until fully cooked.
Serving
  1. Garnish with fresh thyme or parsley before serving.

Notes

For easier stuffing, consider butterflying the chicken breasts. Substitute brie with goat cheese for a tangy twist or add pomegranate seeds for an extra pop of color. Leftovers keep well in the fridge for 3-4 days or can be frozen for up to a month.
