Ingredients
  

Marinade
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
Chicken
  • 4 pieces chicken thighs or breasts
  • to taste Salt and pepper For seasoning

Method
 

Preparation
  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ginger, garlic, and olive oil.
  2. Place the chicken in a resealable bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, ideally overnight for maximum flavor.
Grilling
  1. Preheat the grill to medium heat.
  2. Remove chicken from the marinade and discard the marinade.
  3. Season the chicken with salt and pepper.
  4. Grill the chicken for about 6-7 minutes per side or until fully cooked and juices run clear.
  5. Remove from the grill and let rest for a few minutes before serving.

Notes

For more flavor, use bone-in chicken. You can also swap ginger with fresh lime juice for a zesty twist, or add smoked paprika to the marinade for a smoky touch.
