Preparation
- Preheat your oven to 400°F (200°C).
- Peel the carrots and slice them into 2-inch pieces.
- In a bowl, whisk together the melted butter, harissa paste, honey, apple cider vinegar, and kosher salt.
- Toss the carrots in the bowl until they’re well-coated with the spice mixture.
- Spread the carrots in a single layer on a baking sheet or in a large baking dish.
- Bake for 25 minutes until the carrots start to brown and are fork-tender, remembering to toss halfway through.
- Serve with a sprinkle of fresh parsley on top.
Notes
Storage: Store leftovers in an airtight container in the fridge for about 3 to 5 days. These also freeze well; just reheat in the oven as needed.
