  • 2 pounds carrots Peeled and sliced into 2-inch pieces
  • 3 Tablespoons unsalted butter (melted)
  • 2 Tablespoons harissa paste
  • 2 Tablespoons honey
  • 1.5 teaspoon apple cider vinegar
  • 1 teaspoon kosher salt
  • to taste Fresh parsley (for garnish) Chopped for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and slice them into 2-inch pieces.
  3. In a bowl, whisk together the melted butter, harissa paste, honey, apple cider vinegar, and kosher salt.
  4. Toss the carrots in the bowl until they’re well-coated with the spice mixture.
  5. Spread the carrots in a single layer on a baking sheet or in a large baking dish.
  6. Bake for 25 minutes until the carrots start to brown and are fork-tender, remembering to toss halfway through.
  7. Serve with a sprinkle of fresh parsley on top.

Notes

Storage: Store leftovers in an airtight container in the fridge for about 3 to 5 days. These also freeze well; just reheat in the oven as needed.
