Preparation
- Preheat oven to 400°F. Line a sheet pan with parchment paper or lightly coat with nonstick spray if desired.
- Arrange sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
Making the Glaze
- In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2–3 minutes, stirring occasionally.
- Pour the honey garlic glaze evenly over sausage, sweet potatoes, and broccoli. Toss until all ingredients are thoroughly coated.
Roasting
- Place in the oven and roast for 25–30 minutes, stirring once halfway through, until sweet potatoes are fork-tender and sausage is browned.
- Remove from oven. Sprinkle with freshly minced parsley before serving.
Notes
This dish keeps well in the fridge for about 3–4 days. Store it in an airtight container. Can be frozen for up to 3 months and reheated in the oven.
