  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables optional
  • Chopped green onions for garnish

Method
 

Preparation
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
Cooking
  1. Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  2. In a bowl, mix BBQ sauce, honey, soy sauce, and minced garlic.
  3. In the same pan, toast the uncooked rice for 1–2 minutes.
  4. Pour in the chicken broth and half the sauce. Stir to combine.
  5. Return the chicken to the pan and pour the remaining sauce over the top.
  6. Cover and simmer on low heat for 15 minutes.
  7. Add mixed vegetables, cover, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  8. Let sit for 5 minutes. Garnish with green onions and serve hot.

Notes

For extra crunch, try toasting some nuts or seeds to sprinkle on top before serving. Feel free to substitute chicken thighs for chicken breasts. For a spicy kick, add cayenne pepper to the seasoning mix. Gluten-free? Use gluten-free BBQ sauce.
