Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In another bowl, whisk together the pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix, or your bread will be tough!
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a vegan version, substitute the eggs with a flaxseed meal mixed with water and use coconut oil instead of vegetable oil. Let it cool before slicing to ensure cleaner cuts.
