- Preheat the oven to 375°F (190°C).
- In a bowl, mix together ricotta cheese, fresh herbs, mozzarella cheese, garlic powder, salt, and pepper until well combined.
- Lay the chicken breasts flat and pound them to an even thickness.
- Spread the ricotta mixture evenly over each chicken breast.
- Roll up the chicken breasts tightly. Secure them with toothpicks if needed.
- Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden.
- Transfer the rolls to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
- Serve with a side of your favorite vegetables.
Notes
Store in the fridge for 3-4 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) until heated through.
