  • 1 cup ricotta cheese Creamy filling ingredient.
  • 1/4 cup fresh herbs (parsley, basil, or thyme) Choose your favorite for flavor.
  • 1 cup shredded mozzarella cheese Adds cheesiness and creaminess.
  • 1/2 teaspoon garlic powder For flavor enhancement.
  • Salt and pepper to taste Season to your preference.
  • 1 tablespoon olive oil For searing the chicken.
  • Vegetables (for serving) Can be of your choice.

Method
 

Cooking Steps
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together ricotta cheese, fresh herbs, mozzarella cheese, garlic powder, salt, and pepper until well combined.
  3. Lay the chicken breasts flat and pound them to an even thickness.
  4. Spread the ricotta mixture evenly over each chicken breast.
  5. Roll up the chicken breasts tightly. Secure them with toothpicks if needed.
  6. Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden.
  7. Transfer the rolls to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
  8. Serve with a side of your favorite vegetables.

Notes

Store in the fridge for 3-4 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) until heated through.
