  • 1 cup white beans (canned or cooked) Canned or cooked white beans can be used.
  • 2 large potatoes, diced Regular potatoes can be substituted with sweet potatoes.
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups vegetable broth Ensure the broth is vegan-friendly if necessary.
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste Adjust seasoning to preference.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and thyme, cooking for another minute.
  4. Add the diced potatoes and white beans.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and let simmer for about 20-25 minutes, or until the potatoes are tender.
  7. Season with salt and pepper to taste. Serve warm and enjoy!

Notes

For a creamier texture, blend half of the soup before serving. Feel free to add other vegetables like spinach or kale for added nutrition.
