Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine the whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt.
- In another bowl, mix together the honey (or maple syrup), milk, applesauce, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries, being careful not to squish them.
- Divide the batter evenly among the muffin cups.
Baking
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
To enhance flavor, serve warm with almond butter, powdered sugar, or alongside coffee. For storage, refrigerate for a week or freeze in an airtight container.
