- In a blender or food processor, combine the oats, banana, applesauce, eggs, baking powder, cinnamon, vanilla, and a pinch of salt.
- Blend until smooth and creamy.
Cooking
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes on each side or until golden brown.
- Serve warm and top with fresh fruit or a drizzle of maple syrup if desired.
Notes
These pancakes are best fresh but can be stored in the fridge for up to 3 days or frozen for a month. Reheat in the microwave or toaster.
