Ingredients
  

For the pancakes
  • 1 cup rolled oats
  • 1 unit ripe banana Make sure the banana is ripe for natural sweetness.
  • 1 cup applesauce
  • 2 unit eggs Can substitute with flax eggs for a vegan option.
  • 1 tsp baking powder
  • 1 tsp cinnamon Adjust based on preference for spice.
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a blender or food processor, combine the oats, banana, applesauce, eggs, baking powder, cinnamon, vanilla, and a pinch of salt.
  2. Blend until smooth and creamy.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly grease it.
  2. Pour 1/4 cup of the batter onto the skillet for each pancake.
  3. Cook for 2-3 minutes on each side or until golden brown.
  4. Serve warm and top with fresh fruit or a drizzle of maple syrup if desired.

Notes

These pancakes are best fresh but can be stored in the fridge for up to 3 days or frozen for a month. Reheat in the microwave or toaster.
