Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1/4 cup coconut sugar Can substitute with maple syrup for different sweetness.
  • 1 tsp baking powder
  • 1/2 tsp cinnamon Additional for sprinkling.
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce Can add more for denser bites.
  • 1/4 cup almond milk Can use any non-dairy option.
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the whole wheat flour, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix the applesauce, almond milk, melted coconut oil, and vanilla extract until well blended.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Scoop the batter using a small cookie scoop and place on the prepared baking sheet.
Baking
  1. Bake for 10-12 minutes or until golden brown.
Serving
  1. Once cooled, sprinkle with the additional cinnamon and sugar before serving.

Notes

Let them cool before sprinkling with cinnamon sugar for better stick. To store, keep in the fridge for about 3-5 days or freeze for later.
