  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 2 bell peppers diced
  • 4 cloves garlic finely minced
  • 1 can black beans
  • 1 can kidney beans
  • 28 oz diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 cup chicken broth
  • 2 small jalapeƱo peppers optional, diced
Toppings
  • Sour cream or Greek yogurt
  • Shredded cheddar cheese
  • JalapeƱos and tortilla chips for topping

Method
 

Cooking Instructions
  1. Heat 1 tbsp olive oil on medium-high in a large pot or Dutch oven.
  2. Add diced onions, peppers, and garlic to the pan. Cook for 2-3 minutes until the onions soften.
  3. Toss in the ground chicken and keep cooking until fully browned, about 8-10 minutes.
  4. Add the tomato paste and let it cook with the veggies and chicken for 30-60 seconds, stirring constantly.
  5. Now mix in the remaining ingredients: diced tomatoes, broth, beans, spices, and stir well.
  6. Cover and let it simmer for 15-20 minutes, stirring occasionally. Adjust seasoning as needed.
  7. Finally, top with cheese, sour cream, and all your favorite toppings. Enjoy!

Notes

Store in the fridge for about 4-5 days or freeze for up to 3 months. Reheat on the stove or microwave.
