- Heat 1 tbsp olive oil on medium-high in a large pot or Dutch oven.
- Add diced onions, peppers, and garlic to the pan. Cook for 2-3 minutes until the onions soften.
- Toss in the ground chicken and keep cooking until fully browned, about 8-10 minutes.
- Add the tomato paste and let it cook with the veggies and chicken for 30-60 seconds, stirring constantly.
- Now mix in the remaining ingredients: diced tomatoes, broth, beans, spices, and stir well.
- Cover and let it simmer for 15-20 minutes, stirring occasionally. Adjust seasoning as needed.
- Finally, top with cheese, sour cream, and all your favorite toppings. Enjoy!
Notes
Store in the fridge for about 4-5 days or freeze for up to 3 months. Reheat on the stove or microwave.
