  • 1 lb lean ground beef Use lean ground beef for less grease.
  • 8 pieces flour or corn tortillas Choose your preferred type for the recipe.
  • 2 cups enchilada sauce Store-bought or homemade can be used.
  • 1 cup shredded cheddar or Monterey Jack cheese Feel free to experiment with different cheeses.
  • 1 medium onion, diced Adds sweetness and depth of flavor.
  • 2 cloves garlic, minced To improve flavor, don’t skip toasting.
Spices
  • 1 tsp cumin For a warm, earthy flavor.
  • 1 tsp chili powder Adjust based on heat preference.
Toppings
  • to taste Sour cream For serving, optional but recommended.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onions until translucent, about 5-7 minutes.
  3. Add the minced garlic, cumin, and chili powder; sauté for another minute to awaken those flavors!
Assembly
  1. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  2. Pour the enchilada sauce over the tortillas and sprinkle with cheese.
Baking
  1. Bake uncovered for 20-25 minutes until bubbly and golden.

Notes

Serve hot out of the oven, topped with sour cream or fresh cilantro. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to two months.
