Grilled Cheese Burrito

Ingredients
  

For the Filling
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Method
 

Cooking the Beef
  1. Brown the ground beef in a skillet over medium heat for 8–10 minutes. Drain excess grease and add taco seasoning along with 1/4 cup water. Simmer for about 5 minutes.
Preparing the Tortillas
  1. Heat the tortillas on a dry skillet or pop them in the microwave for a few seconds until they're flexible.
Assembling the Burrito
  1. Lay a tortilla flat on a clean surface. Layer with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top it off with shredded cheddar and mozzarella.
Grilling the Burrito
  1. Heat a clean skillet and sprinkle 2 tbsp of shredded cheese in it. Place the burrito seam-side down and cook until the cheese melts and forms a crispy crust. Flip and repeat for the other side.

Notes

These burritos are perfect as is, but serve them with a side of crispy tortilla chips or guacamole. You can keep leftovers in the fridge for about 3-4 days or freeze them for up to 3 months.
