Main Ingredients
  • 2 cups cooked quinoa or rice Substitute with brown rice or cauliflower rice for a low-carb option.
  • 1 pound chicken breast, grilled and sliced Grill chicken in advance for quick assembly.
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced Crisp and refreshing.
  • 1 medium red onion, thinly sliced
  • 1 medium bell pepper, chopped Any color of bell pepper can be used.
  • 1/2 cup feta cheese, crumbled Can substitute with nut-based cheese for dairy-free.
  • to taste olive oil Don't skimp on this, it brings everything together.
  • to taste salt and pepper
  • 1/4 cup fresh parsley, chopped Adds a fresh touch.

Method
 

Preparation
  1. In a large bowl, combine cooked quinoa or rice with grilled chicken, cherry tomatoes, cucumber, red onion, and bell pepper.
  2. Drizzle with olive oil, and season with salt and pepper. Toss gently to combine.
  3. Top with crumbled feta cheese and fresh parsley.
  4. Serve with homemade tzatziki sauce on the side.

Notes

These bowls will stay fresh in the fridge for up to 3 days, and can be frozen without feta and fresh herbs for up to 2 months. When reheating, keep feta and parsley till the end for maximum flavor.
