- In a large bowl, combine cooked quinoa or rice with grilled chicken, cherry tomatoes, cucumber, red onion, and bell pepper.
- Drizzle with olive oil, and season with salt and pepper. Toss gently to combine.
- Top with crumbled feta cheese and fresh parsley.
- Serve with homemade tzatziki sauce on the side.
Notes
These bowls will stay fresh in the fridge for up to 3 days, and can be frozen without feta and fresh herbs for up to 2 months. When reheating, keep feta and parsley till the end for maximum flavor.
