Ingredients
  

For the Chicken Marinade
  • 2 breasts Chicken breasts Juicy and boneless
  • 2 tablespoons Olive oil For marinating
  • 2 cloves Garlic, minced Toast for extra flavor
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Bowls
  • 1 cup Brown rice or quinoa Cook according to package instructions
  • 1 cup Cucumber, diced Fresh and crunchy
  • 1 cup Tomatoes, diced Cherry or any variety
  • 1 small Red onion, diced For a bit of zing
  • 1 medium Bell pepper, diced Any color
  • 1 cup Feta cheese, crumbled Salty and creamy
  • 1/2 cup Tzatziki sauce For drizzling

Method
 

Preparation
  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Cook the brown rice or quinoa according to package instructions.
  3. Prepare the veggies by dicing cucumber, tomatoes, red onion, and bell pepper.
Cooking
  1. Grill or cook the marinated chicken until fully cooked, then slice it into bite-sized pieces.
Assembly
  1. Assemble the bowls with a base of rice or quinoa, then layer on the grilled chicken, fresh veggies, and crumbled feta cheese.
  2. Drizzle with tzatziki sauce before serving.

Notes

Store leftovers in the fridge for about 3-4 days. For freezing, components can be stored separately for 2-3 months.
