Tzatziki Sauce
- In a separate bowl, mix together Greek yogurt, grated cucumber, minced garlic, olive oil, and lemon juice.
- Season with salt and pepper.
Assembly
- Serve the chicken mixture in bowls, topped with tzatziki sauce and garnished with fresh parsley.
Notes
These bowls keep well in the fridge for 3-4 days. For longer storage, you can freeze the chicken and veggies but the tzatziki is best fresh. Consider adding warm pita bread and lemon wedges to serve.
