Ingredients
  

For the Bowls
  • 2 cups cooked rice or quinoa Use your preference for either rice or quinoa.
  • 2 cups cooked chicken, diced Leftover rotisserie chicken can be used for convenience.
  • 1 cucumber, diced Fresh cucumber adds crunch.
  • 1 cup cherry tomatoes, halved Feel free to slice them smaller if desired.
  • 1 red onion, diced Red onion gives a sweet flavor.
  • 1 bell pepper, diced Any color bell pepper works.
  • 1/2 cup kalamata olives, pitted and sliced Adds a briny flavor.
  • 1/2 cup feta cheese, crumbled The salty feta complements the dish.
  • to taste Salt and pepper Season to personal preference.
  • Fresh parsley for garnish Adds color and freshness.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Choose full-fat for creaminess.
  • 1 cucumber grated and drained Removes excess water for a thicker sauce.
  • 2 cloves garlic, minced Adjust amount depending on garlic preference.
  • 1 tablespoon olive oil For added richness.
  • 1 tablespoon lemon juice Fresh lemon juice is recommended.
  • to taste Salt and pepper Adjust to your taste.

Method
 

Preparation
  1. In a large bowl, combine cooked rice or quinoa with diced chicken, cucumber, cherry tomatoes, red onion, bell pepper, olives, and feta cheese.
  2. Season with salt and pepper to taste.
Tzatziki Sauce
  1. In a separate bowl, mix together Greek yogurt, grated cucumber, minced garlic, olive oil, and lemon juice.
  2. Season with salt and pepper.
Assembly
  1. Serve the chicken mixture in bowls, topped with tzatziki sauce and garnished with fresh parsley.

Notes

These bowls keep well in the fridge for 3-4 days. For longer storage, you can freeze the chicken and veggies but the tzatziki is best fresh. Consider adding warm pita bread and lemon wedges to serve.
