Ingredients
  

For the Chicken Marinade
  • 1 pound Chicken breast Boneless, skinless
  • 2 tablespoons Olive oil
  • 2 cloves Garlic Minced
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Pepper To taste
For the Bowls
  • 1 cup Quinoa or brown rice Cook according to package instructions
  • 1 medium Cucumber Chopped
  • 1 medium Tomato Chopped
  • 1 small Red onion Chopped
  • 1 medium Bell pepper Chopped
  • 4 ounces Feta cheese Crumbled
  • 1 cup Tzatziki sauce For serving

Method
 

Preparation
  1. Marinate chicken breast in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
Cooking
  1. Grill or bake the marinated chicken until cooked through, then slice.
  2. Prepare quinoa or brown rice according to package instructions.
Assembly
  1. In bowls, layer cooked quinoa/rice, sliced chicken, and chopped veggies (cucumber, tomato, red onion, bell pepper).
  2. Sprinkle with feta cheese and drizzle with tzatziki sauce before serving.

Notes

Store leftovers in the fridge for up to 3-4 days; keep tzatziki separate. You can freeze the chicken for up to 3 months. Optional: add extra lemon juice before serving for a flavor boost.
