Ingredients
  

For the marinade
  • 3 tablespoons gochujang Korean chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced Toast for extra flavor
  • 1 tablespoon sesame oil
  • to taste Salt and pepper
For the main dish
  • 2 pounds chicken thighs or breasts Thighs bring more moisture, breasts are leaner
  • Cooked rice For serving
  • Vegetables (e.g., broccoli, bell peppers, or carrots) For serving

Method
 

Preparation
  1. In a bowl, combine gochujang, soy sauce, rice vinegar, honey, garlic, sesame oil, and a sprinkle of salt and pepper to create the marinade.
  2. Add the chicken to the marinade and ensure it’s well coated. Marinate for 30 minutes to overnight.
Cooking
  1. Preheat your grill or skillet over medium-high heat.
  2. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked and charred.
  3. Remove from heat, let it rest for a few minutes, then slice it.
Serving
  1. Serve over rice with your choice of colorful vegetables.

Notes

For longer storage, store in an airtight container in the fridge for up to 4 days or in the freezer for 2-3 months. Reheat on stove or microwave.
