Ingredients
  

For the Cheesecake Filling
  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature for smoother texture.
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream Whip until stiff peaks form.
  • 1/2 cup strawberries, chopped Can substitute with other berries if desired.
For the Crust and Topping
  • Graham cracker crumbs For crust and topping.
  • Mini gnome decorations Optional, but recommended for cuteness.

Method
 

Preparation
  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until smooth.
Assembly
  1. Prepare small cupcake liners and add a layer of graham cracker crumbs at the bottom.
  2. Spoon the cheesecake filling into the liners and top with chopped strawberries.
Chilling
  1. Chill in the refrigerator for at least 2 hours.
Serving
  1. Before serving, add whipped cream and mini gnome decorations on top.

Notes

Store in the fridge for up to 3 days. Can be frozen for up to a month. Thaw overnight in the fridge before serving.
