Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose gluten-free flour blend
  • 0.75 teaspoon xanthan gum Don't skip this for perfect texture!
  • 0.25 cup cornstarch
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon kosher salt
  • 0.5 teaspoon freshly grated nutmeg
  • 0.75 cup granulated sugar
Wet Ingredients
  • 8 tablespoons unsalted butter (melted and cooled)
  • 2 units eggs (at room temperature, beaten)
  • 0.75 cup plain yogurt (at room temperature)
  • 1 teaspoon vanilla bean paste (or 1 1/2 teaspoons pure vanilla extract)
Glaze Ingredients
  • 1 cup confectioners’ sugar
  • 2-4 teaspoons milk or buttermilk Adjust based on desired consistency.
  • 4 tablespoons unsalted butter (melted)
  • 0.5 cup granulated sugar

Method
 

Preparation
  1. Preheat your oven to 350°F and grease a standard-sized donut pan.
  2. In a large bowl, whisk together the dry ingredients until well combined.
  3. Create a well in the center of the dry ingredients.
  4. Pour in the melted butter, eggs, yogurt, and vanilla. Mix until just combined.
  5. Fill each donut pan well nearly full using a piping bag for that perfect smoothness.
  6. Wet your finger and run it along the center of each well to make those classic donut shapes.
  7. Bake for about 12 minutes or until set and lightly browned.
  8. Allow to cool in the pan for 5 minutes.
Glazing
  1. For the optional glaze, mix confectioners’ sugar with a little milk until smooth.
  2. Dip the tops of the cooled donuts in melted butter and dredge in granulated sugar for that sweet crunch!

Notes

These donuts can be stored in an airtight container for 3-4 days, or frozen for up to 3 months. Reheat in the microwave for fresh-baked goodness. Don’t skip the xanthan gum for perfect texture!
