Ingredients
  

Dry Ingredients
  • 1 cup all-purpose gluten-free flour blend
  • ½ teaspoon xanthan gum
  • ½ teaspoon kosher salt
  • teaspoon baking soda
  • ½ teaspoon smoked Spanish paprika
Wet Ingredients
  • 4 tablespoons cold unsalted butter (shredded or finely chopped) Keep cold for better texture.
  • 8 ounces sharp yellow Cheddar cheese (shredded and kept cold) Keep cold for better texture.
  • 2 tablespoons cold water Add more as needed for dough consistency.

Preparation
  1. Preheat your oven to 350°F and line rimmed baking sheets with unbleached parchment paper.
  2. In a food processor, combine all the ingredients except the water.
  3. Add 2 tablespoons of water and pulse, gradually adding more until a cohesive dough forms.
  4. Turn the dough out on a lightly floured surface and roll to about 1/4 inch thick.
  5. Cut out small goldfish shapes and place them on prepared baking sheets.
  6. Bake for 10 to 12 minutes until light golden brown.
  7. Let cool and store in a sealed glass container at room temperature or freeze for longer storage.

Notes

These crackers can be served with dips like salsa or hummus. For better texture, keep the cheese and butter cold. You can also experiment with spices and different cheese varieties for unique flavors!
