Ingredients
  

Dough and Seasoning
  • 1 recipe gluten free pizza dough Prepare according to package instructions.
  • 4 cloves garlic, peeled and minced For a stronger garlic flavor, consider roasting or toasting.
  • 1/2 teaspoon kosher salt Mix with garlic for the paste.
  • 4 tablespoons unsalted butter, melted For brushing on the dough.
Cheeses
  • 1 ounce finely grated Parmigiano-Reggiano cheese Use fresh for best flavor.
  • 8 ounces part-skim mozzarella cheese, grated Grate just before use for optimal melt.

Preparation
  1. Prepare the dough according to the recipe instructions and let it rise in a warm place for 1-2 hours.
  2. Chill the risen dough in the fridge for about 30 minutes.
Cooking
  1. Preheat your oven to 400°F, placing a pizza stone on the bottom rack.
  2. Roll out the chilled dough into an oval shape.
  3. Create a garlic paste by combining minced garlic and kosher salt, then mix it with melted butter.
  4. Brush the garlic butter mixture generously on the dough.
  5. Sprinkle with Parmigiano-Reggiano and mozzarella cheese evenly.
  6. Bake on the pizza stone for about 10 minutes, until golden and bubbly.
  7. Let the sticks set, slice them up, and enjoy!

Notes

Serve hot with marinara sauce or ranch for dipping. Add fresh parsley for color.
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage. Reheat in the oven for best texture.
