  • 1 cup all-purpose gluten-free flour blend
  • 1/2 teaspoon xanthan gum (omit if your flour blend already has it)
  • 3/4 teaspoon kosher salt
Wet Ingredients
  • 6 tablespoons unsalted butter (chilled and grated)
  • 1 cup cheddar cheese (or other semi-hard cheese, grated)
  • 1/4 cup milk (chilled, plus more if necessary)

Preparation
  1. In a medium-sized bowl, combine the flour blend, xanthan gum, and salt. Whisk until combined.
  2. Add the shredded butter and cheese; stir to coat cheese in the dry ingredients.
  3. Make a well in the center, pour in milk, and mix until the dry ingredients are moistened. Drizzle in more milk if necessary.
  4. Use clean hands to squeeze the mixture into a ball.
  5. Wrap the dough in plastic wrap and refrigerate for at least an hour.
Baking
  1. Preheat the oven to 325°F and line baking sheets with parchment paper.
  2. Divide the dough and roll it out to 1/4-inch thick, sprinkling with flour as needed.
  3. Cut into squares and place on baking sheets.
  4. Bake for about 15 minutes until golden brown.
  5. Let cool before storing.
